It was supposed to be my #FoodFriday post but but the other issue was necessary to address so it’s here today.
After posting Salmon with sauce in my stories I got numerous requests for the sauce recipe. So sharing it with you!
This sauce is kind of my fusion creation of white sauce. Once I had “Portabello Chicken” at the local restaurant in Mississauga (which is now closed), it instantly became my favourite. After research, I tried to make it at home and it was a hit. Now it is one magical sauce I used with a little bit of twist on Chicken steak, Pasta and Fish.
Ingredients
Butter 2 tbsp
All-purpose flour 1 to 2 Tbsp
Oyster Sauce 1 tsp
Soya sauce 1 tsp
Chilli garlic sauce or any Chilli sauce 1 tsp
(If you don’t have it use a pinch of red chilli powder or to taste)
Onion 1/2 chopped
Milk 1/2 to 1 cup
Salt to taste
Black pepper powder a pinch
Recipe
Melt butter, add onion when it gets pink(not Brown) add flour stir for a minute add milk, mix it well, when it gets thicken you can add a little bit of water, now add all sauces, salt and pepper. Cook for few minutes, taste it and add more sauce or pepper if desired.

If you want to make Mushroom chicken. Add Mushrooms after onion ( white, brown mini Bellas or Portabello) and follow the same steps. For the sauce, pan fry chicken steaks with salt, black pepper and soya sauce, add it to the sauce and serve it with stir-fried vegetables.
For Pasta, boil the chicken and add the stock with boiled chicken to this sauce instead of water. Make pasta as you want and at the time of serving pour the sauce over it, You can also put it at the side if you don’t want to mix it all.
For fish pan-fry, grill or bake as you want. I used marinated Salmon from Costco and pan-fried it. I skipped onion and flour, added lemon in butter, and replaced Milk with thick cream. The fish sauce is ready
Remember, it’s all about your taste. You can always add, subtract or replace ingredients. I sometimes use crushed chilli and 1 green chilli to make it spicy.
